Overview

Assume all supervisory responsibilities in the absence of the Executive Chef.

Inspect, operate, and troubleshoot utility machinery/equipment; complete work request when needed

Coordinate the clean up after banquets

Inspect kitchens for cleanliness, removal of trash and stocking of all stations

Inspect all equipment temperature controls daily

Distribute appropriate dishware assigned to a specific function and verify items returned

Inspect equipment used for transporting materials for events and reports any damages

Maintain inventory of dishware

Organize storerooms and chemical closets

Ensure that all deliming procedures are performed correctly for dishwashers, ice machines, and steamers

Dissemble kitchen equipment for cleaning proposes and reassemble after completion of task

Perform special projects assigned by supervisor

Perform any reasonable, temporarily assigned job duties outside the position’s job description, where, in the Company’s judgment, those duties are necessary in the interest of efficiency, productivity, or guest service.

Perform duties in a safe manner; report any potential safety hazards to management staff.

Work within the quality control guidelines established by Penn National Gaming and Hollywood Casino Aurora.

Demonstrate an ability and commitment to deliver quality guest service to external and internal guests that follow the guidelines of the Red Carpet Customer Service program.

Follow all safety rules.

Adhere to departmental quality standards.

Maintain compliance with the Illinois Gaming Board Rules, Standards and the company’s System of Internal Controls and Sarbanes-Oxley requirements.

Work within the guidelines established by Penn National Gaming and Hollywood Casino Aurora.

Other duties as assigned.
