Job Description

Title: Chef de Cuisine

Department: Food & Beverage

Reports To: Executive Chef

Supervises: All kitchen personnel

General Summary of Duties: Responsibilities include but not limited to the execution of quality food preparation, training of staff and proficiency in cost control.

Typical Physical/Mental Demands: Requires being mobile 100% of the shift. Typical work shift consist of 9-10 hours. Requires bending and reaching in areas from floor level to 6 feet high. May require lifting up to forty pounds. Requires strong sense of smell, taste, and sight. Requires normal vision range and absence of color blindness. Requires above average eye/hand coordination. Requires the ability to distinguish letters or symbols. Requires the use of telephones, calculators and computers. Requires the use of electrical equipment and some heavy duty kitchen equipment. Requires regular, predictable attendance.

Typical Working Conditions: Work is performed in an area which may be unusually hot, cold, noisy, smoky and dimly lit. Supervises employees working in an area having two feet of access. Constant contact with staff and management.

Example of Duties ( includes but is not limited to the following ):

  1. Assumes full responsibility and charge of designated food outlets, culinary staff and day to day operations.

  2. Administers disciplinary action as needed.

  3. Continuous training and instruction of culinary staff as well as wait staff.

  4. Ensure compliance of all company policies and procedures.

  5. Enforce all state health code regulations.

  6. Give directions to employees to ensure duties are performed correctly.

  7. Responsible for setting appearance standards.

  8. Compose specials of the day.

  9. Maintain production inventory and rotation of product.

  10. Ensure portion control as well as quality control.

  11. Have food purchasing knowledge.

  12. Must be able to interview and evaluate employees.

  13. Must have some proficiency in basic butchery and excellent knife skills.

  14. Must have menu planning skills.

  15. Other job related duties as assigned

  16. Contributes to the profitability and effective operation of the Food Department by controlling waste, labor, food cost and quality. Performance Requirements ( knowledge, skills and abilities) : Knowledge, skills, and abilities: Understand and comply with all company and departmental rules and regulations, policies and procedures. Skill in establishing and maintaining effective working relationships with staff. Ability to read, write, and communicate verbally in English. Ability to perform basic math.

  17. Certificate/License: This position requires food safety and sanitation certificate (ServSafe) or equivalent,.

  18. Experience: Minimum 2-3 years supervisory experience in a high volume hotel. 5 years experience in food preparation in ala carte restaurant.

  19. Education: High school diploma or equivalent required.

  20. Basic culinary knowledge and certification.
