Your daily responsibilities include
Prepare food according to standardized recipes or all outlets; including prep work, sanitation, and any other preparation needed for service. Act as a coach and mentor to Cooks I and II.
ESSENTIAL DUTIES AND RESPONSIBIITIES include the following. Other duties may be assigned.
Promote and maintain all steps of the Marquee Service program with each patron and employee you come in contact with.
Effectively respond to Supervisor’s requests in all areas of customer interaction and customer concerns.
Prepare all orders according to specification. Cook and prepare food products including cutting, trimming, chopping, slicing, carving, mixing, cooking, sautéing, grilling, frying, broiling, baking and steaming and application of other preparation techniques as required for preparation of food and beverage products for venues serviced directly from the kitchen including buffet areas, banquets or party rooms, employee break room or other venues or areas serviced by the kitchen.
Prep food items (e.g., soups, sauces, meats, vegetables, baking as needed, etc.) for daily use. Prep line for each meal. Stock backup (e.g., steaks and seafood) in cooler.
Keep service area clean. Sanitize, clean hood vents, wash walls, sweep and mop, etc.
Rotate and label food in cooler.
Prepare closing: restock, wrap open foods, put foods in cooler, etc.
Confer with Culinary Management as to up to date reservation and house counts as appropriate.
Check with Culinary Management for preparation and presentation of daily specials, substitutions, and product use and availability.
Complete opening and closing side work completely.
Communicate with Kitchen Management to let them know when you are running low on any items. Keep an accurate count of product and request inventory items as needed.
Complete knowledge and understanding of kitchen equipment to include safe operations and regulation of temperatures for proficient cooking times and temperatures.
Inventory amounts of prepared food from previous day.
Transfer foodstuffs from walk-in to reach-in.
Employees may be required to perform duties outside of their normal job description where, in the Company’s judgment, it is necessary in the interest of efficiency, productivity or improved guest service.
To be successful in this position it will require the following skill set
Must be a minimum of 18 years of age
High school diploma or equivalent
Five years prior experience as cook in high volume food service operation
Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment
Basic knowledge of food preparation techniques
Knowledge of weights, measures and recipe yield
Possess and maintain culinary tools (knives) to perform the necessary job functions
Read, write legibly, understand and speak English
Excellent customer service/communication skills
Available to work required schedule which may include nights, weekends, holidays and overtime as needed
Must meet professional appearance standards as prescribed by company policy.
Must be physically mobile with reasonable accommodation
Must be able to respond to visual and oral cues
Able to work in constricting areas
Must be able to tolerate areas with high temperatures
Must be able to tolerate industry standard chemicals used for cleaning and sanitizing
Able to work at a fast pace in often crowded/noisy environment
Must be able to maintain a neat, professional, well-groomed appearance and uphold company appearance/dress standards
Physically mobile with reasonable accommodations including ability to push, pull, carry and lift up to 25 lbs., and the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel and balance when performing job duties in varying work areas such as confined spaces
